Microgreens Pesto
Microgreens Pesto: Ingredients:
1 cup fresh basil leaves
1/4 cup pine nuts or walnuts
1/4 cup grated Parmesan cheese
1/4 cup extra virgin olive oil
1 teaspoon powdered microgreens (such as arugula or kale)
2 cloves garlic
Salt and pepper to taste
Instructions:
1. In a food processor, combine basil, pine nuts, Parmesan cheese, microgreens powder, and garlic.
2. Pulse until the mixture is coarsely chopped.
3. With the processor running, slowly add the olive oil until the pesto reaches your desired consistency.
4. Season with salt and pepper, then blend again.
5. Serve the microgreens pesto with pasta, as a spread on sandwiches, or as a topping for grilled meats.
